A wine and chocolate pairing at AYZA is not a dessert with a glass next to it. It is a structured flight, built chocolate first and wine second, and it arrives with the two matched deliberately rather than hopefully. If you have never ordered one, here is exactly what turns up at the table, what it costs, and how to taste it so the pairings actually work.
Quick answer: Five pairing flights are on the menu, from $29 to $53, all shared for the table and orderable without a booking. The NY Pairing Collection is $44 and the Rosé Experience $42. Guided one hour classes with a wine expert run $59 to $89 per person for groups of six or eight and up. AYZA is at 11 West 31st Street, open from 4 pm daily.

Three or four small pours, three to five chocolates, and the two laid out in the order you are meant to taste them. The pours are tasting measures rather than full glasses, which is deliberate: you are comparing, not drinking through a bottle.
Every flight is a shared order for the table rather than a portion each. Two people is the natural number. Three works. Four means very small tastes, and at that point a guided class is the better format.

The NY Pairing Collection is the one to order if you are visiting the city, because all three wines are from New York State and the chocolates are made here. The Rosé Experience is the diplomatic choice when one of you drinks white and one drinks red. Dark Magic is the only flight built entirely on red wine, and the only one that includes vegan chocolates. Current selections are on the cocktails and wines menu.
Water between pairs is worth asking for. It resets the palate more effectively than bread and does not add its own flavour.

Chocolate is a difficult partner for wine, and the reason is worth understanding. Cocoa brings bitterness and sugar at the same time, plus fat that coats the palate. Bitterness on top of tannin makes a dry red taste harsh, and sugar in the food makes a dry wine taste sour and thin.

Semi private tastings at the restaurant hold up to 35 guests, and off site catering has no limit. Prices exclude tax and a 20 percent service charge, so budget above the headline. Formats are on the wine tasting events page.
A flight is a tasting. Fondue is a plate you sit over for half an hour. The Sweet Treats menu lists two, both for two people. The First Date Fondue is $31 with strawberries, banana, candied orange, French brie, Castelvetrano olives, Espelette pepper and Maldon salt. The Rosé Fondue is $29 with pistachios and organic rose buds.
You choose the chocolate: Callebaut milk from Belgium, Callebaut white, or the 70 percent dark from República del Cacao in Ecuador for $4 more. A sparkling pairing is recommended per person alongside. If you want both a flight and a fondue in one evening, order the flight first; it is the more delicate of the two and will not survive coming after a pot of melted chocolate.

One note on allergies. The chocolate selections include pistachio, hazelnut and coconut across different flights, and are made in a kitchen that handles nuts and dairy. Raise it before you order rather than after the plate arrives.

The wine should be at least as sweet as the chocolate, and you should taste in order from lightest to darkest. Break either and the wine tastes thin or sour.
